Earlier on this year I made elderflower cordial for the first time. I was surprised by how simple it was to make and by how delicious it tasted. It inspired me to make this lemon cordial on a summer day off, together with my youngest son. He really likes juicing oranges on weekend days and loved helping me to juice lemons too. Afterwards we enjoyed our homemade lemonade in the garden. A wonderful summer day!

Ingredients

  • 5 (organic) lemons
  • 250 g sugar
  • 500 ml water

Plus: a juicer

Preparation

Juice the lemons. Put the lemon juice, the sugar and 500 ml water into a saucepan. Gently heat the mixture and stir until the sugar has dissolved completely. Remove from heat. Pour the warm cordial through a sieve into a sterilized glass bottle and seal. The cordial will keep in the fridge for about 4 weeks.

Dilute to your taste with natural or sparkling water to make a refreshing summer drink. It is also wonderful to use as a syrup in creamy desserts, such as cheesecake.
